Pumpkin power muffins

I’m a huge believer in breakfast. My two sisters never eat breakfast and I honestly don’t understand how we are related. As crazy as mornings get, I can’t skip it for the life of me or I won’t be able to function. I got addicted to these protein pumpkin muffins and they have my breakfast every day since October. I highly recommend!

Recipe (updated 9/5/19)

Dry ingredients:
1 cup+ ½ tbsp whole wheat flour
½ cup protein powder (unflavored or vanilla) (I use TIU’s!)
1 teaspoon pumpkin-pie spice
½ teaspoon baking soda
1½ teaspoon baking powder
A pinch of salt

Wet ingredients:
⅓ cup vegetable oil
½ cup brown sugar (For a less sweet version try ⅓ cup!)
2 flax eggs - room temp
1 cup pumpkin puree
¼ Almond milk
+Chocolate chips as needed/wanted

Instructions: mix dry ingredients and wet separately. Then combine and bake at 350 temp for 18-20 min
