Pasta + red pepper sauce = the vegan + GF version of Mac & cheese

It's Monday so it's time to start the week with something delicious and nourishing. This simple recipe has it ALL. Protein, fiber and... two ingredients?! 

Start with turning on the oven to 450 degrees.

I use 3-4 red bell peppers. I cut them to pretty big pieces (4 or 5 pieces each) and sizzle with some olive oil and salt on a lined baking pan. Roast them for 15 minutes and then flip them for another 5-10 minutes. They should be super tender. If they are not tender leave in over for extra time. Take out of oven and use a hand blender to make a sauce.

At the same time, cook Banza pasta (following instructions on the box) and.. that's it! Blend the two and there you go. I also add feta cheese on top because I'm obsessed with feta. It's perfect because it balances the sweetness from the sauce. Makes about 3-4 servings!
