GF no-bake pumpkin oatmeal energy bites

We all get tired and need quick "pick me up" that is sweet, comforting, and filling. It can be after a long practice session or right before a concert.
We usually find a convenience store or a vending machine and buy a bag of chips or M&Ms. Yes, I've been there... BUT don't you wish there was a better alternative that is healthy, easy, and yummy?
Give these cute pumpkin energy bites a try. I guarantee you will get hooked, and these are much healthier than anything in a vending machine. 

Ingredients to make 12-15 balls:
1 1/2 to 2 cups GF dry, uncooked oatmeal (I use old fashioned but quick oats also work)
1/2 cup smooth almond butter
1/2 cup pumpkin puree
1/4 cup chia seeds
1/4 cup quality maple syrup (none of those fake high fructose corn syrup versions if possible!)
1/2 teaspoon cinnamon or pumpkin pie spice
1/2 cup mini dark chocolate chips (GF if needed)

Instructions:
1. Mix all the ingredients (except for the chocolate chips) in a large bowl. The consistency should be soft but not too sticky. If it gets too sticky, you can add more oats. I have found that 1 1/2 cups of oats is enough for the consistency I like.
2. After mixing, let it sit in the refrigerator for 15-20 minutes to allow the oats and chia seeds to expand.
3. Remove from refrigerator and add chocolate chips. Spread evenly on a large surface.
4. Roll into small balls and keep them in the refrigerator for up to one week. (You can also freeze them and it will last for longer).
